It's Friday, we're hungry and there's only one thing we feel like eating: avocado. But with what? We've had it on its own a number of times and TBH, we're a bit bored of that, and fancy something a bit different.

ENTER The Avocado Brunch Challenge.

As part of the final day of our GraziaxFB issue, we streamed live via Facebook, a 10-minute cookery show where presenter, reality TV star Ollie Locke, challenged cookery writer Madeline Shaw and health and wellness expert Calgary Avansino to create the most delicious brunch using the mighty avocado.

The ingredients they chose were:

Madeline Shaw's Avo on Toast

Rye Bread. Tahini. Almond Butter. Spring Onions. Cherry Tomatoes. Toasted Seeds (Pumpkin, Sesame, Poppy). Nuts (Flaked Almonds, Walnuts). Lemon. Lime. Olive Oil. Sea Salt. Black Pepper. Chilli Flakes. Fresh Chilli. Coriander. Basil.

Calgary Avansino's Avo Salad

2 Ripe Avocados. Round Loaf of Bread (roasted with Kosher Salt). 15 Heirloom Cherry Tomatoes. 2 Small Persian Cucumbers. 20 Large Basil Leaves. 1/2 cup Feta Cheese. 1/2 Red Onion. 1 Clove of Garlic. 3 tbsp Balsamic Vinegar. 1/2 Cup Olive Oil. 1/2 tsp Kosher Salt. 1/4 tsp Ground Black Pepper. 1 tbsp. Capers. Pesto.
