Thought we’d reached peak avocado some time in summer 2015? Think again, because the world’s obsession with the Instagram-friendly fruit has just gone up a notch: a new restaurant dedicated entirely to avocado-based dishes is about to open in Amsterdam.

The Avocado Show (which, incidentally, could also work as the subtitle for a fly-on-the-wall documentary about millennial life) is the brainchild of Julien Zaal, Ron Simpson and chef Jaimie van Jeije, who already own another restaurant in the Dutch capital. Found in the vibrant De Pijp district, the all-avocado menu will carry avo enthusiasts through from breakfast to dinner, with a range of sweet and savoury options. Options will include the failsafe avocado on toast and a chocolate avocado smoothie: as the founders put it to Dutch newspaper Algemeen Dagblad, ‘the possibilities are endless.’

Avocado bars have already proved popular in New York, which was graced with a pop-up Avocaderia last year, but it’s taken a little longer for this food trend to hit the mainstream across the Atlantic (though a London restaurant did offer a five-course avocado tasting menu several months ago). If you’ve been looking for an excuse to visit one of Europe’s coolest capital cities, this could be the one to have you reaching for your passport.

A launch date is yet to be announced, but Europe’s first avocado bar is thought to be opening its doors in February. Keep an eye on @theavocadoshow on Instagram to be the first to find out - adding one more avo-based account to your feed won’t hurt, right?
