You know when you're sat in the office and you can't be bothered to head home because like, you'll have to actually spend time cooking something for your dinner? Yeah, that normally happens to us on a Monday as well. WELL, GUYS, we've got a super solution for you. Meal In A Mug is the new book that has 80 recipes that you can cook just using a microwave and a mug in super-speedy time.

One of our favourite recipes is the prawn laska which we thought we'd share with you to fight off the Monday blues. If you can't be bothered to read the instructions below, just watch out handy instructional video above.
Prawn Laska
Ingredients
Large handful (50 g/2 oz) flat-dried rice noodles
100ml/ 3½floz fish stock
1tbsp laksa paste
3tbsp coconut cream
½tsp fish sauce
6 cooked shelled king prawns
Small handful bean sprouts
1tbsp freshly chopped coriander
1 spring onion, chopped
½ red chilli, finely sliced
Laksa is a spicy, fragrant, coconut noodle soup. If prawns aren’t your thing, replace them with a handful of cooked shredded chicken and change the fish stock to chicken stock.
Method

Break the noodle sticks in half and put them in a 500ml/17floz microwaveable mug. Add the fish stock and stir, then microwave on high for 1 minute. Stir well.

Stir in the laksa paste, coconut cream and fish sauce and microwave on high for 1 minute.

Stir in the prawns and bean sprouts and microwave on high for 1 minute, or until the prawns are heated through. Stir in the coriander.

Top with the spring onions and chilli to serve.
And that's LITERALLY all you have to do. Happy munching.
