The Cupcake You Can Make In 3 Minutes To Treat Yourself This Afternoon

Literally from scratch. Using just a mug and a microwave.

Feeling a bit peckish this afternoon and in need of something sweet? In the spirit of Bake Off, how about having a pop at making yourself this coffee and walnut cupcake? If it sounds like a lot of unnecessary work to you, then fear not: OUR cupcake only take 3 minutes to make AND you can even stick a candle in the top and sing happy birthday to yourself when nobody's looking. We won't tell anyone. This also works really well if you actually forget your flatmate's birthday and want to impress her in 3 minutes flat.

Coffee And Walnut Cake

Ingredients

2 tbsp softened butter, plus extra for greasing

1 tbsp chicory and coffee essence

2 tbsp self-raising flour

2 tbsp soft brown sugar

1 tbsp chopped walnuts

½ beaten egg

2 tbsp mascarpone cheese

1 tbsp icing sugar

½ tsp chicory and coffee essence

2 walnut halves

**1 Lightly butter the inside of a small 300ml/½pint microwaveable mug. Add the butter and cook on high for 30 seconds to 1 minute, or until melted. Stir in all the remaining cake ingredients and mix well.

  1. Microwave on high for 1 minute, until risen and spongy. Allow to stand for 1 minute then, if you prefer, remove from the cup and allow to cool.

  2. To make the icing, beat together the mascarpone with the icing sugar and chicory and coffee essence until smooth.

  3. Spread the icing over the top of the cake and decorate with the walnut halves.

That's LITERALLY it guys. Literally. Enjoy your naughty little treat.
