The Breakfast Noodle Soup (Yes Really) To Banish Your Hangover

It might sound weird, but this delicious broth is going to make you feel normal again

Remember a few weeks ago how we told you that Vietnamese food was the best hangover cure you never knew existed? Well, because we're nice we've got you another recipe to try - this time it's a breakfast soup. Which isn't actually as weird as it sounds. Chicken and bamboo soup is a pretty common occurence in Vietnam.

Vietnamese chef Uyen Luu's made up this very excellent recipe for us for a chicken and Tenderstem soup.

Ingredients

For the stock:

1 whole free-range, chicken

1 chicken stock cube

1 tbsp rock sugar (or use a pinch of regular sugar)

1 tsp rock salt

6 tbsp premium fish sauce

140g tinned bamboo shoots (sliced)

For the soup:

280g dry rice noodles

280g Tenderstem

2 spring onions, use both ends, finely sliced

4 tbsp coriander, roughly chopped or torn

2 Asian shallots (or round shallots) sliced into thin semi circles

Pinch of black pepper

4 wedges of lime or lemon

Freshly cut chillies (optional)

Method

Tip: If you want to get even more goodness out of this recipe Uyen suggests saving the water you have blanched the Tenderstem in for a refreshing drink.
