There are few dinner scenarios when pasta isn't the answer. It's quick, easy, and often requires minimal attention which is obviously a huge win. If you're anything like me, a late night pasta dish is normally dependant on a mountain of cheese and a sprinkle of pepper (to make up for the lack of other ingredients to hand), but if you're vegan, you're likely going to have to look elsewhere to feed that rich and creamy craving.
Don't be fooled, though. The vegan pasta possibilities are pretty extensive and if you're teetering on the edge of a plant-based diet, the ones we found will make the idea of giving up meat, cheese and dairy (the holy trinity of pasta accompaniments) a whole lot easier.
