Who said pancakes have to contain eggs, flour or milk? Because some of us know all to well that ingredients like these don't always agree with everyone's stomachs. So, we fell head first into a Pinterest click hole to find you the yummiest looking recipes to whip up on Shrove Tuesday (on 28th February btw, make a little note) for whatever your dietary needs. And we're talking about genuinely interesting recipes you guys, no lemon or sugar in sight.

Some tick all the boxes while others might seem a little left field, but bear with. If you've got a hankering for some pancakey goodness, here's where you just might find the recipe you had no idea you were missing. Fire up the frying pan, kids.

1. Gluten free pancakes

Apple-Oat-Greek-Yogurt-Pancakes

Gluten free food is way more easily accessible than it was once upon a time, but when it comes to typically flour heavy dishes - we're looking at you pancakes - it can be a little trickier to find an equally straightforward and actually tasty recipe. But fear not, this one by Running With Spoons swaps flour for Greek yoghurt and rolled oats which I definitely didn't see coming. And I bet you’ve never thought of putting apple on your pancakes. What a time to be alive.

2. Vegan pancakes

These from Wallflower Kitchen are pretty close to magic. They don’t contain any egg, dairy or refined sugar and are flavoured with cinnamon, cardamom and orange, which sounds really grown up if you ask me. The only thing is that it needs a couple of ingredients that you might not have to hand (rice bran oil and arrowroot powder) but if you're trying to cater to various dietary requirements with one batch of pancakes, this might be a good place to start.

3. Eggless pancakes

Whether you have an egg allergy or are looking for another vegan recipe to have in your pancake arsenal, we’re a big fan of these ones from Rachana’s Kitchen. You’ve probably already got all of the ingredients somewhere in the deep dark depths of your kitchen cupboard and also, look how fluffy they are!

4. Dairy free pancakes

Milk is normally the big pain in the ass for lactose intolerant pancake lovers. Most recipes will call for both milk and water to give them the right consistency, but the dairy-free blueberry pancakes on Averie Cooks uses almond milk instead. Anyone else wondering why they hadn't tried this before?

5. Protein pancakes

Three words. Tiramisu. Protein. Pancakes. Drooling yet? Well, mop yourself up and check out the recipe on A Little Rosemary And Time because it looks omfg amazing. It seems a little bit more labour intensive than some others out there but how often to you get to eat Tiramisu in pancake form? That said, there's also a recipe called Lazy Gal’s Protein Pancakes which might be more up your street on a less ambitious day in the kitchen.

6. Quinoa pancakes

You read right my friend, quinoa indeed. If you're on the superfood band wagon and want to feel smug about life (and food) on Shrove Tuesday give The Kitchen Mccabe’s red quinoa pancakes a whirl. There’s also no refined sugar involved which is a bonus if you’re that way inclined. Excuse for a second helping? We think so.

7. Sweet potato pancakes

Bit rogue, I know. But no more than the quinoa ones. If you love sweet potato and love pancakes, why wouldn’t you want to combine the two? Where’s your sense of adventure? We found them on the Just A Little Bit Of Bacon site and over there they’re served with maple syrup, pecans and whipped cream. If you’re looking for something to keep you full, these might be the ones.

8. Savoury pancakes

Not much of a sweet tooth? No problem. Mitzy At Home has got the pancakes of your Sunday brunch dreams. We’re talking sun dried tomatoes, sour cream, spinach and a beautifully runny fried egg on top. Forget pancake day, we need this in our lives all through the year.

9. French crepe-style pancakes

If you got all the way down to here and wondered where the hell is the chocolate, don’t worry. We haven’t forgotten you. It’s right here in the form of Super Golden Bakes’ chocolate crepes with Nutella (yes, double dose of chocolate) and mixed berries. Definitely more of a desert than a breakfast choice, but we wouldn't judge if you whipped these up at 7:30am on a Tuesday morning.
