Two truths today: 1) microwave meals can be good for you and 2) so can curry. Be gone greasy foil tray of mystery meat in questionable ‘rogan josh’, for today we feast on a nutritious and delicious Indian veggie classic. Saag paneer is often unfairly maligned as a side dish, but a steaming bowlful of this richly flavoured spinach and cheese delight can definitely be a meal in its own right.

Chocka full of vitamins A, K, C, B2, and female friendly minerals folic acid, magnesium and iron (so important for our mental and physical wellbeing), spinach is also super low-cal so adding in the indulgent but yummy paneer balances the dish out well. Don’t be scared of the ghee either; it has a bad rep but people are wising up to the fact its actually a good fat in the same way as coconut oil – something Ayurveda has known for centuries.

Microwave Saag Paneer

Ingredients:

saag-paneer
  • 4-5 pucks of frozen spinach, defrosted and drained (fresh spinach is too wet)

  • 75g paneer cubes

  • 1/3 onion

  • 1 tsp turmeric

  • 1 tsp garam masala

  • Tbsp minced ginger

  • Tbsp minced garlic

  • Tbsp coriander

  • 1 chilli

Method:

  1. Mix the ghee, turmeric, garam masala onion, ginger and garlic in a bowl. Cover and microwave for 90 seconds on full power.

  2. Add the paneer, spinach, coriander and chilli, stir well, cover and microwave for 2 minutes.

  3. Stir again, leave to stand for 1 minute and adjust seasoning to taste.

  4. Pop a mini naan in the toaster while you wait. If you like you can stir a bit of cream or yoghurt through the saag paneer, but I prefer it without.

  5. Eat.
