Marmite has had a lot of air time recently. Last week the news that Marmite could be pulled from supermarket shelves after a spat between Unilever and Tesco about price hikes hit headlines, and Brits were not happy. And now in Marmite news, it turns white when you ‘tap’ it. No we’re not talking about tapping the bottle, we mean tapping the actual food, or more like ‘whipping’ it. Take a look at this video and see for yourself.

As shocked as we are? Want to run to your nearest supermarket and get tapping yourself? Googling how the hell this happens? Us too, and here’s what we found out.

When you whip your Marmite, it fills with teeny bubbles. Those bubbles become more cramped the more you whip it, so the colour changes as light travels into or out of the air bubbles. The more it bubbles, the more light is scattered in different directions than it is absorbed into the marmite. The brown colouring of the marmite is unable to absorb the light, so it turns white. MAGIC.
