Fish pie is SO DELICIOUS, but man, it takes some time to make. Poaching fish in all sorts of aromatics and milk, boiling and mashing potatoes, and THEN it’s got to go in the oven for yonks. No need to reach for the Admiral shelf in Sainsbury’s, though, because you can totally make your own mini one – or even double it to treat your significant other/pal – in about 6 minutes.

I know.

And, with all those different types of fish, you’re in serious vitamin D and zinc territory: bye SAD and any potential colds.

You will need:

A large handful of fish pie mix – mine was smoked haddock, salmon, plain haddock and prawns

Handful of frozen peas

1 medium potato

Knob of butter

Pinch of grated cheddar

Fresh chives

2 heaped tbsp cream cheese

  1. First let’s address the potato; cut into chunks and microwave on a suitable plate or bowl, covered in clingfilm for 3 minutes on full power. My potato was soft after this, but you may need another minute if your microwave is less powerful.

  2. In a separate bowl, mix together the fish, chives, peas and cream cheese. Cover and microwave for 2 minutes.

  3. Meanwhile, mash the potato up with a fork using the knob of butter to help. We’ve kept the skin on because: more vitamins, less faff.

  4. Once your fish pie mix is cooked, pile the mash on top. Sprinkle over the cheese if you like. Grilling it now would be ideal, but rules are rules, so microwave it again for about 40 seconds, just to get the cheese on its way and melting.

  5. That’s it! Season with salt, black pepper and even lemon if you like. It’s a meal in itself really, but if you want, serve with some extra buttered greens or carrots. Or whatever you like.

  6. PS. there’s so many things you can do with fish pie to posh it up. I like to put truffle oil in mine. Also egg is good too, or maybe a smidge of English mustard for some heat. Whatever floats your boat.
