How To Make A Microwave Meal That's Actually Healthy

If the most action your microwave has seen is a steady stream of M&S Fuller For Longer ready meals that have left you feeling… meh… then read on.

Make this no-skills-necessary Shakshuka using just your microwave and feel a) smug b) cultured and c) less like scurvy may be imminent, all for very little time or financial investment.

You’ll probably have most of the ingredients in your cupboard already and this ridiculously quick and healthy dish of eggs poached in a spiced tomato and pepper sauce is full of vitamins and nutrients to help cancel out the rest of the week’s less virtuous behaviour.

Ingredients

Shakshuka0

1 pre-roasted antipasti pepper

½ can chopped tomatoes

1 tsp ground cumin

1 tsp smoked paprika

1 tsp olive oil

2 large eggs

1 tbsp Greek yoghurt

20g feta cheese

Handful fresh coriander

Pita to serve

Method

Roughly slice the pepper and place in a microwaveable bowl with the spices and olive oil. Mix together, cover with clingfilm and microwave on full power for 1 minute.

Add the tomatoes, re-cover and microwave again for 1 minute.

Make two small wells in the tomato and pepper mixture and crack the eggs into each well. Cover and microwave for a further 2 minutes, checking throughout that the eggs have not exploded (!)

Leave to stand, still covered, while you chop the coriander and feta. Crumble over the whole dish and finish by adding a dollop of yoghurt.

Serve with slices of pita and dig in.
