Can’t get enough of those great little egg pots at Leon for breakfast? Neither can we. But they’re a tad on the small side, aren’t they? Make it at home and up the bean content a bit – it’s still really healthy. A lovely, warming, spicy breakfast can be yours in just three minutes and all for around 270 calories. Great news.
Copycat Leon Saucy Beans And Chorizo Egg Pot
You will need:
½ can baked beans
1 egg
Few slices chorizo
2 small tomatoes
What to do
Chop the tomatoes and chorizo and put in a microwaveable mug. Cover with cling film and microwave for one minute on full power.
Pour in the beans and stir well. Re-cover and microwave for another minute.
Crack the egg into the saucy beans mixture, cover and microwave for one more minute. If your egg is not cooked to your liking, then continue cooking for another 20 seconds or so.
That’s literally it. Eat.
