Make Yourself A Comforting Mac N' Cheese In 6 Minutes

Ok so usually this mini-series of microwaveable meals gives you healthy ideas; this one, not so much. Nobody can ever claim that a bowlful of pure white starchy carbs in a cheese sauce is worthy of an #eatclean. But my goodness it is tasty, and healthy eating is all about balance, yes…? This super indulgent dish of comfort and joy is exactly what you need holed up on the sofa with Netflix, and look you can take solace in the fact that there’s way less salt, sugar and nasties than any ready meal version. No need to spend ages slaving over the hob though… we give you: microwaveable mac’n’cheese.

Macaroni and cheese

Ingredients

100g ish dried macaroni

150g mixed grated cheeses (I used half double Gloucester, half mature cheddar)

1 tbsp Quark or other soft cheese

1 tsp English mustard

Knob of butter

250ml boiling water

What to do

  1. Put the macaroni and boiling water in a microwaveable bowl and cover. Heat on full power for five minutes, pausing halfway through the cooking time to add the butter and stir well to avoid the pasta sticking together.

  1. Once the pasta is cooked (it may well need another minute or so depending on your brand of pasta), stir in the English mustard and add all the cheeses, mixing well. The more Quark you add the wetter the finished result will be.

  1. Cover and heat for one more minute. Leave to stand for another minute.

  2. Season generously with freshly milled black pepper and a pinch of good sea salt.

  3. Feel very free to pimp your pasta with some kale / spinach / ham / jalapenos / lobster / whatever floats your boat. Just add it in with the cheese and away you go.
