A fraction of the time, costs and calories of a takeaway, the exotic spices and basmati marry with omega-3 rich smoked mackerel and a simple poached egg for a speedy guilt-free TV dinner.
Ingredients
1 cooked smoked mackerel fillet
½ pack microwave basmati rice
½ tsp turmeric
1 tsp minced ginger
½ tsp garam masala
1 large egg
Handful fresh coriander
1 spring onion
Lemon
Method
Chop the onion and fish and put them in a microwaveable bowl with the rice and dry spices.
Add the ginger, stir, cover and microwave for one minute.
Make a well in the rice, add the egg, cover and microwave for another minute.
Once the egg white is no longer transparent, season by scattering coriander over the top and finishing with a squeeze of lemon juice.
