The sun seems to be out more often than not now (well, by British standards anyway) so it is officially time for warm weather foods. People who’ve been on Greek holidays or the Venice Beach Boardwalk in California will be familiar with Gyros: deliciously warm street food wraps stuffed full of griddled chicken and creamy tzatziki.
The gyros you’ll have had on the streets of Athens, Mykonos or indeed Los Angeles are flavoured up with all sorts herbs, spices and sauces, but I’ve found that you can make a pretty great approximation to enjoy with a nice chilled glass of rosé or a cold beer in the evenings with herby wraps, pre-cooked griddled chicken and a tub of supermarket tzatziki.
Ingredients
2 Herb Tortilla Wraps
1 x 100g Pack Flame Grilled Chicken
2 Large Tomatoes
Handful Lettuce
6 tbsp Tzatziki
Freshly Ground Sea Salt & Black Pepper
Method
The wraps themselves are pretty self explanatory; you just pile it all in, fold it up and eat; the only slightly technical part is the chicken. If you buy the type that has a tight, machine sealed plastic top in a plastic tray carton, you can pierce a few holes in the top to let the steam escape, and microwave the griddled chicken for about a minute on high (in some microwaves it may take longer for the chicken to heat through). This will heat it up nicely while still keeping it warm and tender, so you don’t need to faff around with raw chicken when you want something to eat last minute.
If you’re more of the do it yourself type, you can make your own tzatziki by mixing together 250g Greek Yogurt, 1/2 a grated cucumber (squeezed over the sink in handfuls to remove as much moisture as possible), a large crushed garlic clove, a small handful of chopped fresh dill, and fresh lemon juice and sea salt to taste. Leave it in the fridge for at least half an hour before serving to allow the flavours to meld together somewhat.
