Ingredients for the log:

3 Eggs

85g Golden caster sugar
-
2 Tbsp cocoa powder
-
1/2 Tsp baking powder
-
85g Plain flour
Ingredients for the filling and icing:

50g Butter
-
140g Dark chocolate (break this up into squares)
-
1 Tbsp golden syrup
-
200g icing sugar, sifted
-
2-3 Extra-strong mint
-
290ml pot double cream
-
Icing sugar and holly springs to decorate

290ml Double cream
Method:
- Heat your oven to 200C/fan and line a Swiss roll tin with baking parchment.
- Beat the eggs and sugar together using an electric whisk for until thick and creamy.
- Mix the flour, cocoa and baking powder together, and then sift them onto the egg mixture.
- Using a spatula, fold the powder in very carefully, and then pour the mixture into your tin. Then bank in the oven for 10 minutes.
- Lay a sheet of baking parchment onto a worktop, and tip your cake onto this once it's baked. Peel off the paper, ad then roll the cake up from its longest edge with the paper inside. Leave to cool.
- Right, now for the icing! Melt the butter and chocolate together in a bowl over a pan of hot water. Once melted, remove it from the heat and stir in the syrup and 5 tbsp of cream.
- Beat in the icing sugar until the texture is really smooth. Whisk in the remaining cream.
- Unravel the cake and use a spatula to spread the cream over the top. If you're using crushed mints, now is the time to scatter them over your cake. Then, roll it back up again!
- Use a knife to cut a big diagonal slice from one end of your log. Place the log on a plate, and then arrange the slice on the side with the diagonal cut against the cake to create the appearance of a branch.
- Carefully spread the icing over the log and branch, and then use a fork to create tree bark markings in the cake.. Scatter some icing sugar over your log and decorate with holly for the final finishing touch!
