A gift from the Gods. Avocado is still, against all odds, a big food trend and, like kale and quinoa, shows no sign of going away.
But, if you're bored of eating it on toast, possibly with an egg, then allow us to suggest some alternative ideas....
1. 5 Minute Avocado Mug Cake
Time: Five minutes
You do need a microwave for this one unfortunately chaps so if you're one of those houses too cheap to replace the one that your flatmate put his fist through during a particularly rambunctious round of Shithead then count this recipe off your list. If you do have a microwave though then making this cake is literally easier and quicker than actually going to the shop and actually buying a cake that's really really bad for you. 2. Avocado Banana Bread
Time: 45 minutes
Bananas and avocados get paired together a lot - makes sense, they're both mushy and delicious. This offering of banana bread is much moister than your average banana bread and, thanks to the avocado, a lot tastier too. Check out the recipe from Crazy For Crust.
3. Avocado Fries
Time: 30 minutes.
You know how at Byron Burger everyone's always like 'Oooh gotta get the courgette fries' and you're like yeah OBVIOUSLY. Now, try avocado fries. They're way better for you (not deep fried you see) and they're dead easy to make. Just sprinkle some avocados with breadcrumbs, egg and a little bit of seasoning and bake for half an hour. 4. Avocado Hummus
Time: 5 minutes
DOUBLE the good fats; avocado and chickpeas. How's that for healthy? This recipe from Jennifer Meyering is so simple you could do it with your eyes closed although when there's a blender involved it's probably not a good idea.
5. Avocado Brownie
This reckons its the healthiest brownie ever and actually, judging from the ingredients, it might be. If you can get past the fact it's from a blog called Happy Healthy Mama, you're probably onto a winner. She's used soy and dairy free chocolate chips but you use whatever the hell you want.
6. Avocado Lime Popsicle
This requires you actually owning some of those ice lolly molds you mum used to have when you were little but head to any supermarket and you can pick a set up dead cheap. Other than that, this 'recipe' is just a case of blending avocado with banana, lime juice, maple syrup and coconut cream and freezing it. Check out the recipe here.
7. Vietnamese Avocado Shake
Apparently this goes well with a good Vietnamese pho and tastes like it's full of butter (not sure that's a good thing) despite not having any butter in at all (this is a good thing). Check out the recipe from Urbane Jane here.
