Celery is the worst when it comes to waste. Never, but never have you managed to get yourself through an entire bag of celery. Every recipe calls for just a stick of it. But they don't just sell it in sticks do they? And so celery sits in your fridge until it becomes a wet and soggy mess and your flatmate goes: 'What's the smell?'
Here's a few things to do with that leftover stuff. That are super-easy and, more importantly, super cheap.
1. Marinated Celery Salad
Time: 2 minutes (plus a few hours for marinating)
If you're not a fan of celery by itself (true, it's not to everyone's taste raw), try marinating it overnight for lunch the following day like Breakfast To Bed here recommends with rice vinegar, honey, sesame oil, red wine vinegar and pepper. Have it with some cooked chicken or salmon from the supermarket at work or uni the next day.
2. Celery with almond butter and almonds
Time: However long it takes you to spread some almond butter.
A super-healthy, super-popular snackaroo in the healthy eating blogging world, mainly on account of all those 'good fats' almonds have in them. Way to go almonds, way to go. See also, doing this with peanut butter and raisins. Americans bloody love it.
3. Greek Yoghurt Waldorf Salad
Time: However long it takes you to chop some veg and chuck it all in a bowl
A Waldorf Salad (so named by Blair Waldorf from Gossip Girl. Nope, sorry that's a lie), is normally one of those salads that pretends it's good for you by being a salad but actually has loads of mayonnaise in meaning that it's actually probably worse for you than a giant burger. Blogger A Latte Food has made hers with the much healthier option of Greek yoghurt. Add your celery to some apples, raisins and a few other bits and you're sorted with super- healthy salad.
4. No Cream Creamy Celery Soup
Time: 30 minutes
Celery soup might sound like something Beyoncé or Elizabeth Hurley eat when they're doing a detox, but (shock horror) it can actually taste A-OK (as long as you leave out all of the cream celery soup normally requires). Luckily blogger Erren's Kitchen has come up with a good recipe that's cheaper to make than buying yourself a chocolate bar.
5. Alkalizing Green Detox Soup
Time: 20 mins
Get ready for the greenest bloody soup you've ever laid eyes on. This soup is essentially green juice in soup form. It's so good for you it'll probably add 300 years to your life just by smelling it. That's not true, but it is good for you. Just add your celery to a whole bunch of other green veg and simmer for a few mins – just like Detox DIY has done here.
6. Classic Egg Salad
Time: 10 minutes
Make for tomorrow's sandwiches. The egg salad you get in supermarket sandwiches ain't all that. Make your own from home like The Kitchn have done here with celery and spring onion.
7. Freeze it
Time: no time
If you really don't fancy any more celery (and that's fair enough, sometimes you fancy it, sometimes you don't) then you don't even have to eat it now. Just chop it up, pop it in some Tupperware and freeze it until the next time you make yourself a stew that calls for it.
