The sexier, tastier sister of the humble potato is actually really good for you, boasting nearly twice and much fibre as a normal potato, lots of heart-healthy B6 vitamins and antioxidants.
Here's some fun things to do with it.
1. Sweet Potato Toast
Time: 10 minutes.
Holy hell this is the greatest invention ever known to man. Did you know you can *toast *sweet potato? Like in the toaster and then eat it as if it were toast? What a time to be alive. Just slice your potato thinly, pop it in the toaster (it took blogger Little Bits Of two goes on 'high' to get it done) and then smother with what you would normally smother toast with. Like eggs and avo. If you find your toaster getting all sticky and minging, switch to the the grill instead. It's not as fun but it saves on clean up.
2. Carrot & Sweet Potato Noodles with Asian Almond Butter Sauce
Time: 10 minutes
Spiralised courgetti can do one. Every time I've tried I've either A) nearly spiralized my finger off or B) ended up with a soggy wet mess of courgette that looks nothing like the stuff on Instagram. Sweet potato noodles though are actually worth the hype. Try this simple recipe from My Healthy-ish life. If you don't have a spiralizer you can use a peeler and make thicker ribbons.
3. Sweet Potato Hash With Baked Eggs
Time: 50 minutes
Technically this is a brunch thing but that doesn't mean you can't make this for dinner and for lunch as well. Just grate a sweet potato, season it a little and cook with the eggs. Get the full recipe here from The Cooking Canuck.
4. Sweet Potato And Chickpea Curry
Time: 30 minutes
One of those good ones to make loads of on a Sunday and then eat all week for lunch. As long as you have a microwave at work or uni, it's probably not as good cold. Get the full recipe here from Heather Likes Food.

Time: 40 minutes

6. Lentil And Sweet Potato Shepherd's Pie
Time: 1 hour
A vegan version of the that dish your nan makes which smells a bit like feet. This one doesn't smell like feet and is actually very delicious. It does require a bit of work but it's totally worth it. Get the full recipe from One Ingredient Chef.
7. Baked Egg Stuffed Sweet Potato
Time: 30 minutes
This is like the healthy version of those TGI Friday's loaded potato skins. This recipe from Running With Spoons recommends cooking the potato first in the oven but give that a miss and whack it in the microwave instead. No-one's got time to wait for a baked potato to cook.
