Eggs are cheap, filling and versatile - and you sure can't beat a quick scramble (no pun intended). But as delicious as they are in their simplest form, served over toast, we can't help feeling that this dish has untapped potential. Whether whisked up with fresh herbs, cheese or bacon, here are a few simple ways you can elevate the humble scrambled egg...

2. Goat Cheese Scrambled Eggs With Pesto Veggies

3. Indian-style Scrambled Eggs

'Egg Bhurji' (or Indian-style scrambled eggs) bring in the flavour big guns with mustard seeds, ginger and turmeric. Topped with chopped fresh coriander, this dish would traditionally be eaten with a buttered roti or a warm bread roll, according to The Kitchn, and they make a superb speedy supper.

Something of a breakfast all-in-one, this moreish looking recipe from Cafe Delites involves filling avocado boats filled with cheesy scrambled eggs and crispy bacon bits. This one packs a good protein punch and should, in theory, satisfy those raging hunger pangs on a Sunday morning (or a Monday night).
